Wrap with plastic food wrap. Ice Box overnight
5am. Brisket to room temp
Fire up Smoker with favorite Wood. My Stick of choice is Pecan temp to 225
Brisket on… Fat side up the Point must face the Heat
Spritz every hr. with favorite Spritz I use 50/50 Apple cider vinegar TX Whisky
4hr in wrap with pink non wax Butcher Paper to Choke out the Smoke
The Stall comes between 160 & 170
Pull 190
Rest 1hr on cutting board wrapped 1hr.
